Irrelevant
Trying to bake a pineapple upside down cake today and everything went south! When that happens, my temper goes north and everything I try to do is irrelevant to the desired outcome. My husband vacates, dogs get scolded for being in the kitchen, I want to burn the house down and solve all our problems – at my husbands “snarky” suggestion. Got that word from my husband’s cousin.
What the hell happened today?
I took my happy pill when I got up, per usual. My husband and I spend an enjoyable day inside air-conditioned stores like Menards and Best Buy. Hard to get anything accomplished when it’s 93 degrees outside. We came home, took care of the animals and he started dinner. Burgers on the grill and oven baked fries. I commenced to putting together the desert.
We have a pineapple on the verge of going bad, so, it’s upside down pineapple cake time. One of my hubby’s favorite cakes. The recipe is online, in my pins. I get the dry ingredients prepared, then start with the wet ones in the mixer. I used three different measuring cups. After the batter was all mixed and poured into the bundt pan, I discovered that I had measured 2 1/2 cups of flour using the 2/3 cup!
wtf?!!
The whole event is shot. My temper is fully exposed and I say screw it, I’m putting it in the oven anyway. It was to be a beautiful cake, too. I used coconut oil instead of veg. oil or butter. It was to be super moist and flavorful. Hubby will be delighted at how good it is!
Oh, wait a minute, no he won’t because it’s shot! I hope the rest of my days are not like this. Can’t cook without making blunders, can’t walk without spraining my ankle (did that over a month and a half ago. My ankle is still swollen). No motivation to take care of the train wreck that is our house. Clutter, clutter, CLUTTER!
Enough of that, get over it
My husband always says, “ain’t nothing but a thing“. It’s harder than it sounds. Non-the-less here I sit, having ate my dinner and waiting on the cake to bake. I’m not expecting it to even hold together. Moving on, mind off the blunder.
One of the reasons we went to Best Buy today was to look at laptops for me. The one I would like to have is the Apple iMac Pro, 15” screen with touch tabs, 512 gb memory. But, it has a price tag of $3200 with Apple Care for three years. We saw the wireless printer that would go well in our camper. An HP all-in-one scanner, printer, copier that has wireless technology compatible with Apple.

Hubby took the cake out and wasn’t aware of turning the cake out of the pan before cooling too much. It stuck a little when we tipped it over. Hubby says, “don’t go by how it looks, go by how it tastes!” He was licking a fork when I looked at him. I asked how it tasted and he said pretty darn good. I took a bite and it wasn’t half bad! Surprising! It looks pitiful!
I thought I would kill two birds with one stone by fixing this desert. A school chum of mine is coming over tomorrow. I thought it would be nice for our visit as well. I think I will fix something else. Although, the house being a total wreck, this bundt cake fits right in!
